Instant Pot Balsamic Chicken

Tonight was a first time trying out this recipe, it's a spin off the usual chicken caprese I like to make. This recipe using the thighs and drumsticks!


We buy whole chickens and cut them into 7 parts; 2 breasts, 2legs, 2 wings, carcass.


I have been attempting different things with the legs, mostly with failure, this time I nailed it.


The chicken fell off the bone, the marinade and sauce were perfect! Travis and Tico approved!


😋Make sure to have some sourdough to soak up the sauce afterwards!


Ingredients:

2 chicken legs

1 can organic diced tomatoes

5 shakes of balsamic vinegar

1/4 cup bone broth (chicken or beef)

Salt

Pepper

Tbsp Dried oregano (generous pinch)

Tbsp Dried sage (generous pinch)

Tsp Italian seasoning

1 swirl of olive oil

1tbsp butter (maybe 2)


Marinade:

8 shakes balsamic vinegar

Italian seasoning

Salt

Pepper


Directions:

Marinade chicken at least a few hours in advance, a few days is even better.


Put all ingredients in instapot, cook for 10 minutes. Quick release pressure.


Put chicken on a baking sheet (I use parchment).


Set the instant pot to saute, and let the sauce boil. Stirring, and scraping the sides the whole time, until the sauce has thickened.


While the sauce is thickening, place chicken under the broiler about 3 mins each side (or until the skin looks crispy)


Place chicken on a plate, put sauce over, and In Joy!!!!
